The Greek Lemon Herb Chicken recipe is one of many recipes that fall under the category “Mediterranean Diet”. This is something that native Greeks have intuitively known for centuries. You can lower your cholesterol and lose weight by staying with simple fresh ingredients, moderate consumption, and by replacing butter and margarine with virgin olive oil. This of course should also be coupled with regular physical activity.
Below is a quick Greek recipe for making this chicken dish. I love chicken so this is something I prepare quite often. It’s simple, quick and healthy.

GREEK LEMON HERB CHICKEN RECIPE
Preparation Time: 12 minutes
Servings: 2-3
INGREDIENTS
- 2-3 chicken breasts (boneless and skinless)
- 1 tablespoon olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- 2 cloves of garlic, minced
- A pinch of salt and pepper
INSTRUCTIONS
- Season chicken breasts with salt and pepper
- Blend lemon juice, olive oil, garlic, and dried oregano in a bowl, and mix together
- Pour the lemon herb mixture over the chicken and let sit for half an hour
- Set your stove to medium/high heat and preheat your grill pan
- Grill the chicken breasts for 7-8 minutes each side until cooked
- This can then be served with a Mediterranean side dish of your choice.

RECOMMENDATIONS
With this dish, I recommend grilled vegetables:
- -marinate zucchini, eggplant, bell peppers, onions in olive oil, garlic and lemon juice
- -then grill until tender and slightly charred)
